BREW GUIDE: Kalita Wave
A product of Japanese ingenuity and expertise, the Kalita Wave is a pour over brew method with a simple design that produces a delicious cup of coffee which contains equal parts flavor and body. This is attributed to the flat bottom design and the number of holes in the bottom of the brewer to control and direct flow rate. A great first pour over brewer to get, it is a must have for any home barista.
This is an example of a pulse-pour recipe, with specific pours to make at specific times during the brew.
Here’s what you’ll need:
-400g of water (16:1 ratio)
-25g of freshly ground coffee (fine-medium)
-Kettle
-Kalita Wave and proper filter

Pre-wet paper filter and after the water has drawn down.
Put ground coffee in brewer.
Tare your scale, pour your freshly ground coffee into the Kalita, set your timer, and bring your water to temperature.
Once scale is tarred, timer is set, and water is up to temperature, begin following recipe: time weight
Let liquid draw down and your brew should finish by 3:45.
