SUPPLIES:
400g of water (16.6:1 ratio)
24g of freshly ground coffee (fine-medium)

CONTINUOUS POUR

STEP ONE
Pre-wet paper filter and after the water has drawn down, put ground coffee in the brewer.

STEP TWO
Zero out your scale, set your timer, and bring your water to temperature.

STEP THREE
Start your timer and begin your first pour with a gentle 50g pour while making sure to completely saturate the coffee.

STEP FOUR
Let the slurry bloom for about 20-25 seconds, beginning your next pour around 35 seconds in. Pour 175g of water in slow yet deliberate concentric circles, making sure to completely saturate the slurry evenly while not hitting the sides of the brewer (estimated 30-40 seconds). Let the slurry draw down for 15-20 seconds before beginning next pour.

STEP FIVE
Pour 175g of water again in slow yet deliberate smaller concentric circles, keeping your stream closer to the center of the brewer, not hitting the sides of the brewer. This should take anywhere from 30-40 seconds, bringing your total brew time to 1:50-2:15.

FINAL STEP
Let liquid draw down and your brew should finish by 2:30-3:00. Enjoy!
